Physicochemical and microbiological composition in milk from Bulgarian Rhodope Cattle breed

Abstract: The objective of the present study is to investigate the changes in the physico-chemical microbiological composition of cow’s milk of the Bulgarian Rhodope cattle breed rearing on the pasture grass and indoor conditions during the lactation in the region of Smolyan. Fats vary widely as a result of the different BRC, rearing in different conditions from 3.24 to 6.08%. In the course of lactation, a decrease in the content of somatic cells, bacteria and coliforms was found as a result of free pasture grass.
