INFLUENCE OF THE ORGANIC REARING ON THE MEAT PRODUCTION OF THE MALE CALVES OF THE BULGARIAN BLACK AND WHITE CATTLE

Abstract: One way dispersion analysis was used in a study on the influence of the organic rearing of the Bulgarian Black and white male calves. Initial age of the experimental groups was 6-8 months, which were split by the analogous method according their age and live weight. The animals were reared free stall and fat at lib with whole ration mixture. The concentrate forage daily was 40% of the ration weight at the traditional rearing and 1 kg for the organically reared groups. The assessment of the carcasses was performed in certified slaughter houses on their conformation and fatness according the (S)EUROP classification system. The organic rearing of the Bulgarian Black and white male calves was a considerable factor with high significance (Р<0.001) on the traits final age and average daily gain after 12 months of age. The fat content in the carcass decreased (Р<0.01). The organically reared calves reached the same slaughter weight to that at conventional conditions for 113.43 days longer rearing period due to the 0.615 kg lower growth intensity. The linear contrasts were highly significant. The organically reared Bulgarian Black and white male calves were with 3.45 kg less fat in the carcass (Р<0.01).
