PHENOTYPIC VARIATION OF THE COAGULATION ABILITY OF MILK OF LOCAL BREEDS OF SHEEP IN BULGARIA.

Abstract: The purpose of this study was to determine the phenotypic variability of the coagulation ability of milk of different breeds of sheep. We studied 614 individual milk samples from eight Bulgarian native sheep breeds. Were investigated parameters characterizing the coagulation ability of milk - during the formation of coagulum (R min); coagulum size (K20), firmness of the coagulum in mm (A30) by Computerized Renneting Metter - Polo Trade, Italy. From the research conducted by us fundamentals of coagulation ability of sheep’s milk is found wide variation of these parameters in different sheep breeds. The established phenotypic variation indicates the need for more detailed analysis of the components variance and importance of factors of which was determined. Bulgarian milk from indigenous sheep breeds come in the study are characterized by very good parameters describing the coagulation ability.
